My Super Boosted Coconut + Vanilla Matcha Latte (serves 1)

Ingredients:

1 cup of coconut milk

¼ cup of boiling water

½-1 tsp of matcha powder

1 tsp of cashew butter or coconut butter

¼ tsp of vanilla paste

1 tbsp of MCT oil

½-1 tsp of coconut sugar (optional)

Method:

Boil your kettle and then add your coconut milk to a saucer and heat on low until gently simmering.

Pour the boiling water, coconut milk, matcha powder, cashew butter, vanilla paste, MCT oil and coconut sugar into your blender and blitz on high for 45 seconds.

Pour into a mug and enjoy.
